Noos Nocino

The invented word NOOS is derived from the word “Nos,” which means “walnut” in Ticino dialect. On a mystical night around the summer solstice, the nuts used to make them, still unripe at this point, are gathered by women barefoot, exclusively in Ticino.

As the legend says, this is exactly how we implement it. Hand-cut, the walnuts are placed in the best Ticino grappa along with various spices and Swiss sugar and exposed to the elements for 40 nights for maceration. Bottling is also done only at night. As in the past, with NOOS we are able to capture the mystical energy of the night in the bottle. Thus was born our nocino.
