Il Bianco di Chiara™, produced by Paolo Basso and dedicated to his daughter Chiara

Bianco di Chiara is the elegant and complex merlot white that enhances the most elaborate first and second courses and fish dishes.

The nose surprises with notes of hawthorn, sweet spices, vanilla, citrus and tropical fruits. But it is in the mouth that it is at its best, with a soft, rounded style, a delicate structure and a very persistent finish, where it reveals a great personality.

• Grape varieties 100 % Merlot, vineyards located in Castel San Pietro

• Barrel aging Alcoholic fermentation in French Sylvain and Gillet barrels (70% new; 30% 2nd passage) of medium toast, with bâtonnage once a week during the first two months. Aged in barriques for a period of eight months.

It all started unknowingly with his grandfather’s basement, which had been referred to as “the forbidden place” during his childhood. A place that hid who knows what secret in his childhood imagination. Perhaps the wine was the keeper of the secret, because his grandfather treated it with care and respect and let it age in this quiet place where time seemed to stand still. A few years later, during a language study stay in Valais, a passion was born in him that led him to further his wine education.

Today, after much study, work and competition, he is part of the small group of 6 sommeliers in the world who have won both the title of Best Sommelier in Europe (2010) and Best Sommelier in the World (2013).

After this last competition, his career took an important and intense turn, full of commitments and opportunities that allowed him to diversify his sphere of action and operate as a consultant, teacher, trader, and especially as a wine producer.

Since 2014, he has worked as a consultant and wine selector for Air France airline, which was awarded the coveted “Best Airline Wine List of the World” award in 2018 and 2019.
