- Description
Carmignano comes from the selection of the best Sangiovese (80 percent) and Cabernet Sauvignon (20 percent) grapes. It is the only DOCG in Italy in which the use of Cabernet Sauvignon is mandatory, as thanks to the history of the Medici, Carmignano was born from the blend of Sangiovese and “French Grape,” which was Cabernet Sauvignon. The grapes are fermented separately in temperature-controlled stainless steel tanks, as they have different ripening times.
After malolactic fermentation done in steel, Sangiovese and Cabernet Sauvignon are blended and placed to mature in medium-aged French oak tonneaux for a minimum of eight months.
After bottling, our Carmignano remains in bottle aging for an additional eight months.
