The aroma of juniper and citrus is present as much as that of pepper and spices. This gin tastes a lot delicate , slightly fruity, while if you keep the gin in your mouth, the flavor of the different herbs and spices slowly emerge.
The Bombay Sapphire stands out thanks to the Steam Infusion carried out with Carterhead stills. During the distillation process, the vapor of the spirit passes through a basket at the top of the column and is delicately infused with the aromatic flavor of botanicals. Finally the gin is mixed with water from Lake Vyrnwy and then bottled. This whole process is performed more slowly for the production of Star of Bombay, which in fact is produced in small batches even more spaced apart than the Bombay Sapphire.
Master distiller Nikolas Fordham traveled the world with Master Botanical Ivano Tonutti in search of new aromatic herbs, spices and fruit that could harmoniously combine with the original 1761 recipe and chose dried Calabrian bergamot peel and Ecuadorian hibiscus seeds. , which make Star of Bombay a little stronger and spicier than Bombay Sapphire. Slowing down the steam infusion process also helps to enrich this gin with aromas. Star of Bombay is the first of the special Bombay collection to be created in Laverstoke Mill, the distillery and headquarters of the brand opened in October 2014 for the production of Bombay Sapphire and its tasting. The bottle of Star of Bombay reflects even more the precious stone to which the whole brand takes inspiration and to which this gin owes its name: the famous 182-carat sapphire from Sri Lanka (Ceylon island) called Star of Bombay . It is famous for being one of the widest star sapphires and for being brighter than other gems. The stone is on display at the Smithsonian’s National Museum of Natural History.
