WINEMAKING
Ca’ del Bosco has decided to rediscover and re-evaluate the territory’s traditional red grape blend, returning to favor the Merlot, Cabernet Franc and Carménère varieties over Cabernet Sauvignon. A return to the past to enhance the fruit character of Merlot, the elegance of Cabernet Franc and the roundness of Carménère. The presence of Cabernet Sauvignon provides the essential backbone to impart balance and longevity. This wine is the fruit of a careful selection of grapes and skillful vinification conducted in full respect of the Ca’ del Bosco Method. Grapes from 8 different vineyards, hand-picked in small boxes, are promptly coded and cooled in cold storage. Each cluster is selected by expert eyes and hands, and then benefits from our exclusive “cluster spa.” A special system for washing and whirlpooling the clusters, through three soaking tanks and a system for complete drying. Next, each cluster is transported over the maceration vat. With destemming, the grapes fall into the vat, from above, by gravity. This eliminates traditional pumping systems, which are the cause of broken skins and unwanted herbaceous notes. In the 2018 Harvest, maceration in contact with the skins lasted 18 days for Merlot and Carménère, 19 days for Cabernet Franc and Cabernet Sauvignon. Alcoholic fermentation and maceration were conducted by carefully managing temperature and punching down. Pumpovers were carried out daily, using a pair of elevating tanks into which the wine, tapped from the bottom of the vat, is transferred by gravity. The wine, carried aloft from the flying tanks, is poured into the vat, at high flow rate, to submerge the “cap.” Nothing could be more natural and effective for gently extracting color and tannins. On racking, the wines, still warm, are racked into small oak barrels. Only after malolactic fermentation, in the middle of winter, are the different batches racked and blended. Thus was born “Corte del Lupo Rosso,” which continues its aging in wood and steel for about 22 months. Then the wine is bottled by gravity, naturally. Thanks to innovative “long-cannula” taps, the wine rises from the bottom of the bottle without lamination, without shaking, and without oxidative shock. No addition of sulfites at this stage, ensuring integrity and wholesomeness.
Lastly, every packaged bottle is uniquely marked in order to guarantee its traceability.
