In the pupils that fade to the horizon and shrink as they look east to the sunrise or west to the sunset that marks the end of a day devoted to the vineyard. Love of nature and devotion to the earth, are strong and tangible concepts of perceiving space as a form of the highest poetic and artistic expression of nature.
It envelops and protects the terroir, the vineyard, the vintner and every living thing. And it is here, in the Wolf Valley, that this animal is master of its space and has the power to bring fertility, abundance and to protect the territory. It is here, in this place, that Corte del Lupo Bianco was born, the wine that from the immensity of the earth is aged in the spaces of small oak barrels.co, to ensure traceability.
GRAPE VARIETIES
Chardonnay 80%, Pinot Blanc 20%.
VINEYARDS OF ORIGIN
12 Chardonnay vineyards, with an average age of 33 years, located in the communes of Erbusco and Cazzago San Martino.
2 Pinot Blanc vineyards, with an average age of 28 years, located in the municipality of Passirano.
WINEMAKING
“Corte del Lupo Bianco” is made from grapes from 13 vineyards whose exposure, clones and age guarantee the potential in breadth and integrity of a Ca’ del Bosco-style white wine. A perfect combination: the fragrant fruitiness of Chardonnay and the elegance of Pinot Blanc. In keeping with the Ca’ del Bosco Method, the grapes, hand-picked in small crates, are promptly coded and cooled in cold rooms. Each cluster is selected by expert eyes and hands, and then benefits from our exclusive “cluster spa.” A special system for washing and whirlpooling the clusters, through three soaking tanks and a system for complete drying. Only the best first-portion must gives rise to this wine, about 1/4 vinified in small oak barrels used the year before for Chardonnay. The remaining portion is vinified in steel vats. The two fractions, after 8 months of aging on their own yeasts, without malolactic fermentation, are blended; then the wine is bottled by gravity, naturally. Thanks to innovative “long-tube” taps, the wine rises from the bottom of the bottle without lamination, without shaking, and does not suffer any oxidative shock. No addition of sulfites at this stage, ensuring integrity and wholesomeness. Finally, each packaged bottle is uniquely marked to ensure traceability.
