This Trentodoc millesimato is made from a selection of Chardonnay grapes harvested by our winemakers in mountain vineyards north of Trento. Soft pressing and low-temperature fermentation with selected yeasts allow the aromas of the grapes to express themselves to the fullest and blend with those produced by the yeasts. In the spring, when the base wines have reached ideal maturity for frothing, the Alperegis Brut cuvée is elaborated by blending the base wines that best express the characteristics of mountain Chardonnay. Low-temperature frothing and aging on the lees for a minimum of 36 months lead Alperegis Brut to the ideal aromatic and flavor balance to support disgorgement.
Color: straw yellow with golden highlights.
Nose: hints of ripe yellow fruit, with citrus undertones, along with notes of bread crust and sweet almonds. The perlage is creamy and persistent.
Taste: The dosage of the house liqueur, specially crafted for this product, allows minerality and aromatic fragrance to be enhanced, integrating elegantly and making it very gentle on the palate.
Between history and legend, Rotari is named after the Lombard king Rotari, who fought some of the most important battles in the conquest of Italy in Trentino Alto Adige. Rotari grows its Chardonnay and Pinot Noir grapes in Trentino, an unspoiled environment with an ideal mountain climate to produce complex, elegant and refined Trentodoc sparkling wines with aromas unrepeatable elsewhere.
