It represents the essence of AlpeRegis sparkling wine production.
Made from a selection of grapes harvested in the hillside vineyards surrounding the Piana Rotaliana. It stands out for its maturity and balance.

Aged for 60 months on the lees. Grapes are harvested at a more advanced stage of ripeness than other sparkling wine bases. This resulted in base wines with more controlled acidity, but still fragrant in terms of aromatic freshness. Total malolactic fermentation of the base wine further reduced acidity for the benefit of softness and fullness of flavor. The choice of tirage yeast was made by favoring certain strains that bring roundness to the taste through the release of mannoproteins.

Typical notes of hazelnut and dried fruit well harmonized with hints of peach, apricot and yellow apple. The absence of dosage of the house liqueur allows the strong, unadulterated taste of this thoroughbred sparkling wine to be savored without sacrificing the pleasure of a palatable taste.

Between history and legend, Rotari is named after the Lombard king Rotari, who fought some of the most important battles in the conquest of Italy in Trentino Alto Adige. Rotari grows its Chardonnay and Pinot Noir grapes in Trentino, an unspoiled environment with an ideal mountain climate to produce complex, elegant and refined Trentodoc sparkling wines with aromas unrepeatable elsewhere. Rotari follows the ancient and refined production technique of the Metodo Classico, strong in the vocation of the Trentino territory and its winemaking tradition, as also guaranteed by the prestige of the Trentodoc seal.
