After a period of experimentation on Calabrese, an ancient native grape variety originating in southern Calabria, Calabrise was born, a testament to our aptitude for rediscovering and enhancing the regional ampelographic heritage. A tribute to our land and its people.
Production technique: the grapes, harvested by hand in early October, undergo a long maceration on the marc. After only 7 months of aging in steel containers, the wine is
bottled, so as to preserve the fragrance of the fruit intact.
Characteristics: dark red in color with purplish highlights, the nose has hints of red fruit, plum, black cherry and black pepper.
In the mouth it is fresh, pulpy, sunny, with soft, caressing tannins.
Advice: ideal with all typical Mediterranean dishes
With more than 170 years of history, the Ippolito winery represents the oldest winery in Calabria today. Located in the historic center of Cirò Marina, the heart of Calabrian viticulture, the winery includes an agricultural estate of more than 100 hectares, distributed among rolling hills and sunny plains close to the Ionian Sea, located in the classic Cirò area.
The company’s mission has always been the recovery and enhancement of indigenous grape varieties such as Gaglioppo, Greco Bianco, Calabrese, Pecorello and finally Greco Nero. Through constant research, the use of innovative techniques, and direct control of all production processes, we seek elegance, exclusivity and identity with our terroir in our wines.
