Soul of Primitivo DOP

nima di Primitivo Primitivo di Manduria PDO by Claudio Quarta Vignaiolo is a red wine produced from 100% primitivo grapes, a vine originating from Croatia and also widespread in California under the name of Zinfandel, and which owes its name to the early biological cycle. The plants are grown with sapling or spurred cordon on medium-textured soils tending to loose, with a good presence of skeleton. The grapes are harvested in the 1st decade of September, by mechanized harvester, between night and the first light of dawn so that the low temperature prevents a spontaneous start of fermentation.  Anima di Primitivo hasan impenetrable garnet red color. Aroma of ripe red fruit, with evident references to cherry and plum in alcohol. Jammy flavor, rich and of beautiful length, with well-balanced tannins.

The Soul is the essence of the vine, its most authentic expression. Vinification in steel, evolution in oak barrels for 6-8 months , further refinement in the bottle.

Tradition and research, history and innovation, roots and modernity: it is on this double track that runs the production philosophy that nourishes the identity of the three Claudio Quarta Vignaiolo wineries. Claudio and Alessandra, father and daughter, the South in their blood mixed with an international outlook, make three masterpieces of winemaking art in Puglia and Campania that weave together autochthony, landscape and art: Tenute Eméra, Cantina Sanpaolo and the small Moros. “I leave New York and the Nasdaq to rediscover the flavor of my land.” It is 2005, at the height of the success of a career that has taken him around the world, Claudio Quarta decides to stop. After a life spent as a biologist, geneticist and microbiologist, developing innovative biotechnologies that could contribute to the improvement of human life, he feels the desire to carry out an ambitious project for his South.
