White wine made from Merlot grapes from vineyards located on the flat and hillside in Gudo, Bellinzona district, with production maintained at 800 g of grapes per plant. Grapes are harvested two weeks before full phenolic ripeness so as to preserve good acidity that gives freshness to the wine. An addition of 10 percent Chardonnay helps the expression of aromas to the bouquet, which denote an important exotic fruit note. The soil is characterized by gneiss and granitic moraine soils, and their exposure is to the south. Vinification takes place after soft pressing of the grapes at a temperature maintained at 12-14 degrees. The use of Champagne yeast gives the finished wine great freshness and aromatic variety, characterized by notes of exotic fruit and robinia flowers. After alcoholic fermentation the wine is kept on its fine lees until bottling, this process gives the wine fatness and breadth. Chardonnay is vinified separately in steel barrels.

Happily embedded in this palette of colors, the Sasso Chierico Estate covers six hectares where the harvests are repeatedly excellent year after year. Here the Antognini family, looks at their vines, as old as forty years, with the proud eyes of those who have always believed in quality, convinced that terroir should be caressed like a child. An authentic encounter with the civilization of vine and wine.

Those grapes pampered throughout the season and then vinified with passion and expertise by winemaker Luca Biffi are now encased in bottles with an elegant label.
