45% Cabernet Franc, 35% Syrah, 20% Cabernet Sauvignon

Maceration 2 to 4 weeks, depending on variety and vintage. Maturation takes place in French oak barrels (13% new barriques) for 18 months followed by aging for 6 months in concrete tanks. Bottling is done without clarification or filtration.

In the panorama of the many wineries on the Tyrrhenian coastal strip, Fattoria Kappa is among the newest. The start of the actual business dates back to 2005, and in recent years it has grown exponentially, due to both the entrepreneurial skills of the owners and the great sensitivity of winemaker Andrea Di Maio. The winery started off quietly with the first grapes purchased and then blended, eventually leading to leased vineyards: from the initial 2 hectares to the current 12.

The grape varieties are quite varied: Cabernet Franc, Cabernet Sauvignon, Syrah, Merlot, Petit Verdot, Rebo. The first blended wine is from 2007 with two different labels, one white and one gray: in the former all the mentioned grapes appear, in the latter there is more Syrah. It is produced in that of Rosignano Marittimo, on decidedly sandy soils, while in 2008, vines from Collemezzano, an area with very clayey soil, are also being used, and the results are beginning to be felt and perceived. Since 2009 the vineyards of Castellina Marittima have been joined by vineyards in Volterra, located at 350 meters above sea level on limestone soils, which give the grapes rich aromas and acidity.

The conduct of the vineyards, by conscious business choice, is close to the biodynamic principle.
