Perfection combines with the delicacy of balanced nuances in a Franciacorta rosé, from only Pinot Noir grapes, the result of the art of knowing how to recognize that ephemeral moment in which to separate the must from the macerating grapes. A moment to be seized to achieve the distinctive deep pink coloring and seven years of patient aging for an aromatic fragrance of extreme finesse. A supreme gustatory balance, a unique nuance of rose, a very fine perlage, Cuvée Annamaria Clementi Rosé is a rare example of harmony and excellence, dedicated to the founder of Ca’ del Bosco.

3 Pinot Noir vineyards, with an average age of 33 years, located in the municipality of Erbusco.

The Cuvée Annamaria Clementi Rosé is the ultimate expression of pure Pinot Noir vinified in pink, Ca’ del Bosco style. The grapes, in accordance with our Winemaking Method, are hand-picked in small boxes, promptly coded and cooled in cold storage. Each cluster is selected by expert eyes and hands, and then benefits from our and sclusive “cluster spa.” A special system for washing and whirlpooling the clusters, through three soaking tanks and a system for complete drying. For destemming, the clusters are transferred over the vat and then fall into it by gravity. This eliminates traditional pumping systems, which are the cause of broken skins and unwanted herbaceous notes. This is followed by a short maceration of the grapes at a temperature of 14°C to obtain that special deep pink color and aromatic profile of extreme finesse and harmony that will characterize the Cuvée Annamaria Clementi Rosé in the bottle. All stages of vinification of the different base wines take place in small oak barrels made from selected woods that have been aged for at least 3 years and stored in deep, cool underground cellars. Alcoholic fermentation, malolactic fermentation and barrel aging last a total of 8 months. Cuvée Annamaria Clementi Rosé was born from the art of knowing how to blend base wines from the 3 historic vineyards by selecting only wine from the best barrels. It is tapped by drop and a pair of flying tanks transfers it by gravity, from the barrels to the assembly tank. At least an additional 8 years of aging on lees are needed to achieve the olfactory harmony and excellent flavor balance that make Cuvée Annamaria Clementi Rosé a supreme Franciacorta. Dégorgement takes place in the absence of oxygen, using a unique system designed and patented by Ca’ del Bosco. This avoids oxidative shocks and further sulfite additions and makes our Franciacorta wines purer, more enjoyable and longer-lived. Finally, each packaged bottle is uniquely marked to ensure traceability.
